Accidental restaurateur Kathleen Baumgardner believes that “everyone should be treated with dignity” and to have access to healthy food. And so with these core beliefs, she set out to open a nonprofit restaurant where patrons pay what they can and pay with their time when they come up short on cash. The volunteer-driven nonprofit cafe based in Fort Collins, Colo has served more than 41,000 organic meals in its first 21 months of existence and continues to thrive with diners hailing from the business, civic and homeless communities.
